Ingredients
- Potatoes
- Flour (optional)
- Egg yolk (optional), beaten
- Fine breadcrumbs (optional)
- Beef drippings
Procedure
- Boil the potatoes until almost done. Drain.
- If desired, dip the potatoes in flour, then egg yolks, then breadcrumbs.
- Heat the drippings in a pan. Add the potatoes, and fry until brown and crisp, shaking regularly to prevent burning.
- Remove from pan, and serve hot.
