Peanut burger, also called coated peanut, refers to a Nigerian snack consisting of battered and fried peanuts or groundnuts. You can serve it at birthday celebrations or just have it for a quick snack around lunch. It is normally fried, but it can also be baked in the oven.
Ingredients
- Roasted groundnuts or peanuts
- All-purpose flour
- Corn flour
- Sugar
- Baking powder
- Ground cinnamon or nutmeg
- Vegetable oil

Procedure
- Pick over the nuts, removing any split or broken nuts, then transfer the nuts to a bowl.
- Combine the all-purpose flour, corn flour, sugar, cinnamon, and baking powder in a bowl.
- Whisk the egg until well-combined.
- Mix 1 tbsp beaten egg into the nuts, shaking well to coat. Add 1 tbsp of the dry mixture, and repeat the shaking to coat the nuts. The peanuts will first stay together; break them apart using your fingertips, then sprinkle the sticky peanuts with some more of the dry mix, shake again. Repeat the previous steps five times total to ensure that all the egg has been used and that the peanuts have been completely covered in flour and separated from one another.
- Transfer the smooth, fully-coated peanuts to a colander, and gently shake off any remaining flour.
- Heat enough vegetable oil in a pot to deep fry the coated nuts.
- Add the nuts, working in batches if necessary, and fry for about 10 minutes until golden all over.
- Remove the nuts, and place on paper towels to drain.
