Procedure

  1. Pour oil 3–4 inches (7.5 cm to 10 cm) deep in a pan and preheat to 370°F (~190°C).
  2. In bowl mix cornmeal, flour, baking powder, baking soda, salt, and cayenne.
  3. Mix in eggs, green onions, milk, and ¼ cup vegetable oil.
  4. Spoon 6–7 tablespoons of the batter into preheated oil.
  5. Fry, stirring constantly for overall browning, until golden brown.
  6. Remove from heat and drain on paper towels.

Notes, tips, and variations

  • ⅓ cup minced green onions may be substituted for fresh onions.
  • Add 6 oz (170 g) pimento cheese to the batter.
